Sometimes.....I have a hard time balancing real-life and the life I'm trying to create here in my little corner of the Internet. Instead of apologizing and saying "So sorry for not being around the past 2 months." I've decided to just be real, and let you know that there may be times that I'm absent for a few days...maybe a week! And, I'm totally okay with this:) Life is tough....why make it tougher for yourself right?! There are specific reasons for my recent absence and I won't say anything other than that.... But, I really appreciate those of you that may still be here or to those new visitors who are just discovering Orange Tree Square for the first time! I'm super excited to dive back into the blog...I hope you'll stick around and see what fun things I have in store:)

That said....I've got a super easy recipe to start us off on our new adventure! This really isn't a recipe, it's more like a "Hey, what do I have in the fridge that must be used ASAP?!" I was chilling on Saturday afternoon, watching season 5 of Game of Thrones when I got a craving for pasta. I didn't have any tomato sauce in the house so I rummaged through the fridge and decided that my Roma tomatoes and bacon really needed to be used or I'd have to toss them in the rubbish bin the next day. So, I concocted a really great lemon Parmesan pasta with roasted tomatoes and bacon and let me tell you....it was great! I hope you enjoy....the recipe is at the bottom:)



















Recipe:


  • 3-4 Ripe Roma tomatoes
  • 4+ strips of bacon
  • Enough pasta for 2 servings (I used fettuccine)
  • 2 Tbsp butter, melted
  • 1/2 cup Parmesan cheese (Fresh or in a can...use what you've got!)
  • 2 Tbsp Lemon juice (Fresh is best...but the little plastic lemon will work in a pinch!)
  • Balsamic Vinegar for taste.
Cook your pasta as instructed. While pasta is cooking, cook up your bacon and then add to tomatoes and roast in a skillet. Once pasta is cooked to your liking, drain and put back in pot. Mix in melted butter and Parmesan cheese. After you've plated the pasta, spoon the tomato and bacon mixture on the top and drizzle with balsamic vinegar. Enjoy!!!!
