Happy Friday night! Yay! You made it to the weekend...high fives all around! Now sometimes when I get home from work I'm just soooo wiped out, that the idea of cooking is equivalent to climbing a mountain. I just don't wanna do it! Waaaaaaaah...... I know, dramatic. But seriously, some days are just a killer. On those days it would be so easy to just call my local pizza delivery or hit up the fast food joint on the commute home. But I'm seriously trying to eat healthier these days so I fight the urge! Woot!! So, this is one of my new "go-to" dinners. It's easy and yummo at the same time and even though I think you could figure out your own version...I'll post my recipe at the bottom!
Spicy Tuna Boats
- 2 cans white albacore tuna
- 3 tbsp Miracle Whip or mayonaisse
- 1 tsp each pepper, garlic salt and chili powder
- 2 tbsp sweet relish
- 2-3 mini heirloom tomatoes
- 3-4 hearts of romaine lettuce
Combine all the ingredients and fill your lettuce boats then enjoy the heck outta your dinner!!!
